Ingredients
- 1 lb. ground turkey/beef
- 1 can (6 oz.) tomato paste
- 1 chopped onion
- 3 stalks chopped celery
- 1 red bell pepper, diced
- 1 jalapeño
- 1 carrot, shredded
- 1 cup barley
- 2 1⁄2 cups water
- 4 garlic cloves, minced
- 3 tbsp. Worcestershire sauce
- 6 tbsp. red wine vinegar
- 1 tsp. salt
- 1 tsp. pepper
- 1 tsp. garlic powder
- 1 tsp. onion powder
- 2 tsp. paprika
- Parmesan cheese for topping
Instructions
Ready in 45 minutes / Serves 4

Bring 2 1⁄2 cups water to a boil, add 1 cup barley and reduce to a simmer for 45 minutes.

Brown the meat and drain off excess fat.

Add all spices, red wine vinegar, Worcestershire sauce and tomato paste.

Reduce heat to medium, add all vegetables and cover for 15-20 minutes stirring occasionally.

When barley and meat mixture are done, combine and mix thoroughly.

Serve topped with parmesan cheese.
